Tuesday is my work-from-home day so that also mean pork roll for breakfast. I have a lot of leftovers from Cinco de Mayo so I figured I’d put that to use as well.
I was horrified to find that I had only one slice of pork roll left in the package. But one slice is better than no slice. Fry an egg, add some mexican cheese, salsa verde, red salsa, throw it between two corn tortillas and BOOM. Now there’s a Mexican Jersey breakfast for me!
I’m sure ll you pork roll traditionalists will be horrified at the sight of this because it’s not on a hard roll, etc. HA!
